Bean Burgers



Makes 4

Ingredients
400g tin red kidney beans, drained and rinsed
30g breadcrumbs
1 clove garlic
1 tsp cumin
1 tsp ground coriander
salt and black pepper

Method
Blitz the garlic, breadcrumbs, cumin, coriander and about 3/4 of the kidney beans until it becomes a fairly smooth puree
Lightly mash the remaining kidney beans and mix into the bean puree along with a little salt and pepper to taste
Take a quarter of the mixture in your hands as form into burger shaped patties
Repeat for the remainder of the bean mixture
Put the formed burgers in the figure for a couple of hours to help them firm up
They can either be fried in a little oil for about 5 minutes each side, or baked in a preheated oven at 200C for 20 minutes
