Beef and Guinness Stew



Serves 4-6

Ingredients
1 tbsp vegetable oil
2 carrots
1 onion
1 potato
200g mushrooms
400 g beef shin or stewing steak
440ml can Guinness, Murphys or other Irish stout
200ml beef stock
2 bay leaves
sprig of thyme
1 tbsp flour
salt and black pepper


Method
Peel the onion, carrot, mushrooms and potato and chop into chunks
Chop the beef shin into large cubes
Mix the meat with the flour and some salt and pepper
Heat the vegetable oil in a large saucepan and brown the meat for 2-3 minutes
Add the vegetables and mushrooms and cook for another 2-3 minutes
Add the stout and stock and scrape any bits of meat that have stuck from the bottom of the pan
Add the bay leaves and thyme
Bring to the boil, reduce the heat, cover and simmer gently for about 3 hours until the meat is very tender
If the stew looks too dry at any stage add a little water
Season with salt and black pepper
Serve with potatoes

Notes: After all the ingredients have been added to the saucepan the mixture can be transferred to a slow cooker and cooked for 7-8 hours.
