Beef Goulash



Goulash is a stew of meat and vegetables and flavoured with paprika. It originated in Hungary but there are versions now in other countries like Czech Republic. Although in no way authentic this version is based on the Hungarian goulash

Serves 4

Ingredients
1 tbsp vegetable oil
600g stewing steak, diced
1 onion, peeled and chopped
1 clove garlic, crushed
3 tbsp paprika
400g tin chopped tomatoes
250g mushrooms, sliced
1 red pepper, deseeded and sliced
1 tsp caraway seeds
500ml beef stock
salt and black pepper

Method
In a large saucepan cook the onion and garlic in the vegetable oil over a medium heat for 2-3 minutes until beginning to soften
Add the stewing steak, increase the heat to high and cook for about 5 minutes, until the beef is browned
Then add the paprika and caraway seeds and stir well to coat the meat
Add the tomatoes, red pepper, mushrooms and the beef stock bring to the boil and simmer for 2-21/2 hours until the meat is tender
Season with salt and black pepper
Serve with rice or potatoes

Notes: After all the ingredients have been added to the saucepan the mixture can be transferred to a slow cooker and cooked for 7-8 hours.
