Beetroot, Feta and Haricot Bean Salad



Ingredients
2-3 medium sized beetroots (about 150g), cooked
100g feta, cubed
100g haricot beans, drained
juice 1 lemon
3 tbsp olive oil
salt and black pepper

Method
Chop the beetroot into smallish cubes
Mix the feta and beans with the chopped beetroot
Mix the lemon juice and olive oil to make a dressing
Pour the dressing over the beetroot feta and beans and mix well
Season with salt and back pepper
