Beetroot Soup (Borscht)



Borscht is a traditional soup from Eastern Europe that is usually, though not always, made with beetroot as the main ingredient. It is found in many countries like Russia, Poland, Ukraine and Lithuania. There are many different recipes for it. Here is my version of it which is a very simple beetroot soup.

Serves 4

Ingredients
1 onion, peeled and diced
500g cooked beetroot, diced
1 stalk celery, washed and chopped
1.2 litre vegetable stock
juice 1 lemon
salt and black pepper


Method
Put the beetroot, onion and celery in a saucepan
Add the stock and lemon juice, bring to the boil and simmer for 30 minutes
Liquidise the soup using a hand blender or in a liquidiser/food processer
Return the liquidised soup to the heat.
Season with salt and black pepper and serve
