Brunswick Stew
Serves 4
Ingredients
1 tbsp olive oil
1 onion, peeled and diced
1 green pepper, deseeded and diced
1 yellow pepper, deseeded and diced
1 clove garlic, crushed
400g tin chopped tomatoes
400ml vegetable stock
1 tbsp chopped parsley
1/2 tsp tabasco sauce
250g sweetcorn (tinned or frozen)
230g tinned butterbeans (drained weight)
500g chicken, cubed
salt and black pepper
Method
Fry the onion, peppers and garlic in the olive oil over a medium heat for 5 minutes
Add the tomatoes, stock, tabasco sauce and parsley, bring to the boil and simmer for 30 minutes
Then add the cubed chicken, sweetcorn and butterbeans and simmer for a further 30 minutes
Season with salt and black pepper
