Butternut Squash And Prawn Curry



Serves 4

Ingredients
1 tbsp vegetable oil
1 onion, sliced
1 clove garlic, crushed
250g butternut squash, cubed
100g green beans
400ml coconut milk
1 tsp cumin
1 tsp tumeric
1 tsp chilli powder
1 tsp ground coriander
1 tsp grated ginger
1 tsp curry powder
2 tbsp fresh coriander, chopped
juice of 1 lime
Salt and black pepper to taste

Method
Heat the vegetable oil in a large saucepan and fry the cumin, tumeric, chilli powder, ground coriander and curry powder for 1 minute
Add the onion, ginger and garlic and fry for 5 minutes stirring frequently
Add the coconut milk, lime juice and the butternut squash
Bring to the boil and reduce the heat to a simmer and cook for 10 minutes
Add the green beans and simmer for another 5 minutes
Add the prawns and simmer for a further 5 minutes
Season with salt and black pepper
Transfer to plates or bowls and sprinkle the chopped fresh coriander over the top

Note: You can substitute pumpkin for the butternut squash.
