Butternut Squash Soup



Serves 6-8

Ingredients
600g butternut squash
600 g carrots
1 onion
1.5 litres vegetable stock
salt and white pepper

Method
Peel and chop the vegetables into chunks
Put them into a large saucepan over a medium heat
Add the stock to saucepan, bring to the boil and simmer for 30 minutes
Liquidise the soup using a hand blender or in a liquidiser/food processer
Return the liquidised soup to the heat
Season with salt and black pepper and serve
