Cabbage Soup
Serves 4
Ingredients
250g savoy cabbage, shredded
11/2 litre vegetable stock
1 onion, diced
1 tbsp sunflower oil
salt and black pepper
Method
In a large saucepan gently sweat the onion in the sunflower oil for 5 minutes until soft. Do not allow to the onion colour.
Add the cabbage and the stock to saucepan, bring to the boil and simmer for 30 minutes
Liquidise the soup using a hand blender or in a liquidiser/food processer
Return the liquidised soup to the heat. Season with salt and black pepper and serve
