Cauliflower Soup



Serves 4

Ingredients
1 onion, peeled and diced
500g cauliflower, washed and chopped
1 potato, peeled and diced
1 litre vegetable stock
250mls milk
salt and white pepper

Method
Put the onion, cauliflower and potatoes in a saucepan
Add the stock, bring to the boil and simmer for 30 minutes
Liquidise the soup using a hand blender or in a liquidiser/food processer
Return the liquidised soup to the heat.
Add the milk, stir well and heat through
Season with salt and white pepper and serve
