Cheese Sauce



Ingredients
40g butter
25g flour
275ml warm milk
125g Cheddar cheese, grated
salt and white pepper

Method
Melt the butter over a low heat in a small saucepan
Sprinkle in the flour and stir to make a roux
Cook the roux for 2 minutes, stirring constantly
Add the warm milk a little at a time, stirring constantly with a balloon whisk
When all the milk has been added bring the sauce to the boil and gently simmer for 5 minutes
Take the saucepan off the heat and stir in the grated cheese
When the cheese has melted season the sauce with salt and white pepper
