Chicken And Mushroom Pasta Bake
Serves 4
Ingredients
300g cooked chicken, cubed
1 tablespoon extra virgin olive oil
1 onion, diced
100g mushrooms, chopped
1 clove garlic, chopped
200g mozzarella, cubed
400g penne
40g butter
25g flour
275ml warm milk
50g breadrumbs
50g cheddar or parmesan cheese, grated
salt and black pepper
Method
Preheat the oven to 200C
Put the olive oil, onion and garlic into a largish saucepan and fry gently for 5-10 mins
Add the mushrooms and chicken and fry for another 5 minutes
Meanwhile make a bechamel sauce. Melt the butter over a low heat in a small saucepan
Sprinkle in the flour and stir to make a roux
Cook the roux for 2 minutes, stirring constantly
Add the warm milk a little at a time, stirring constantly
When all the milk has been added bring the sauce to the boil and gently simmer for 5 minutes
Mix the sauce with the chicken, mushrooms and onions
In the meantime bring a large saucepan of water to boil
Add the penne and cook for 10 mins, or according to the packet instructions
When the pasta is cooked mix it together with the chicken and mushroom sauce and the cubed mozzarella
Season with salt and black pepper
Put the mixture into an ovenproof container
Mix the breadcrumbs and the cheese together and sprinkle this evenly over the top
Bake in the oven for about 20 mins, until the breadcrumb topping is crisp and golden
Divide between 4 plates and serve
