Chickpea Curry



Serves 4

Ingredients
1 tbsp vegetable oil
2 tsp curry powder
1 tsp grated ginger
1 clove garlic, chopped
1 red chilli, deseeded and chopped
1 tsp chilli powder
1 tsp coriander
1 onion, diced
1 400g tin tomatoes, chopped
1 tbsp tomato puree
1 400g tin chickpeas, drained

Method
Put the oil in a saucepan on a medium heat
Add the curry powder, ginger, chilli, chilli powder and coriander and cook for a couple of minutes
Add the onion and garlic and fry for 5-10 minutes until the onion softens
Add the tomatoes, tomato puree and chickpeas
Fill the empty tin from the tomatoes with water and add to the saucepan
Bring to the boil and simmer for about 40 minutes
Serve with rice or naan bread
