French Onion Soup



French onion soup is often served with a large cheese crouton. These are made by toasting slices of French bread in an oven and sprinkling cheese such as Gruyere on top. They are placed in the bowl and the soup poured over them, or placed on top of the soup after it is poured into the bowl.

Serves 6

Ingredients
400 g onions, thinly sliced
25g butter
2 tbsp olive oil
1 clove garlic, crushed
1 tsp sugar
1.2 litres vegetable stock
salt and black pepper, to taste

Method
Heat the oil and the butter together in a large saucepan over a medium heat
When the butter has melted add the onions and garlic and cook for 10 minutes until beginning to soften
Sprinkle the sugar over the onion. Season with salt and pepper to taste and stir.
Turn the heat down low and cook for 40 minutes stirring frequently, until the onions have carmelised and turned golden brown
Add the vegetable stock, bring to the boil, cover and simmer on a low heat for 1 hour

Notes: This is a vegetarian version of French Onion Soup which traditionally uses beef stock. The vegetable stock can therefore be substituted for beef stock if required.
