Leek And Potato Soup
Serves 4
Ingredients
Knob of butter
1 leek, sliced
3 medium sized potatoes, diced
1 onion, chopped
2 celery sticks, chopped
1.5 litres vegetable stock
salt and black pepper
Method
Melt the butter in a saucepan over a medium heat
Add the leeks and onion and sweat for 5 minutes
Add the celery and cook for another 5 minutes
Add the stock and potatoes to the saucepan, bring to the boil and simmer for 30 minutes
Liquidise the soup using a hand blender or in a liquidiser/food processer
Return the liquidised soup to the heat.
Season with salt and black pepper and serve
