Lemon Meringue Ice Cream
Ingredients
300ml double cream
juice and zest of 2 lemons
250ml natural yoghurt
75g icing sugar
4 meringues, crumbled
Method
Pour the cream into a large mixing bowl and whip until fluffy
Fold in the icing sugar, lemon juice, zest, yoghurt and meringues
Pour into a freezable container and put in the freezer until the mixture is frozen
While the mixture is freezing take it out every hour or two and mix it well to breakdown ice crystals
Note: The ice cream can also be frozen in an ice cream maker if one is available
