Lentil And Bacon Stew



Serves 4

Ingredients
1tbsp olive oil
1 carrot, peeled and diced
1 large onion, peeled and chopped
125g mushrooms, cleaned and sliced
200g green lentils
200g bacon lardons
200mll water or cold vegetable stock
400g tin chopped tomatoes
1tsp fresh thyme
1tbsp balsamic vinegar
salt and black pepper

Method
Rinse the lentils
Fry the onion, garlic, carrot, mushrooms and bacon in the olive oil for 5 minutes
Add the lentils, water or stock and thyme
Boil for 5 minutes
Add the tinned tomatoes and balsamic vinegar
Cover and simmer for 30 minutes until the lentils are tender
Season with salt and black pepper
