Mixed Bean Stew



Serves 4

Ingredients
400g canned mixed beans
200g canned kidney beans
400g can chopped tomatoes
1 onion
1 clove garlic
1 tablespoon chopped parsley
1 tablespoon olive oil
salt and black pepper

Method
Peel and chop the onion and garlic
Fry the onion and garlic gently in the olive oil for 10 minutes until soft
Add the chopped tomatoes and simmer for 10 minutes
Add the beans and simmer for a further 5 minutes
Stir in the chopped parsley
Season with salt and black pepper
Serve with boiled rice, potatoes or crusty bread
