Pasta With Broccoli



Serves 4

Ingredients
2 tbsp olive oil
200g broccoli
salt and black pepper
400g penne, or other dried pasta

Method
Cut the broccoli into florets and boil for 6-8 minutes or until tender
Meanwhile put the pasta into a large pan of boiling water. Stir well to prevent it sticking together, and cook for 8-10 minutes (or according to the packet instructions)
When the broccoli is cooked take about 2/3 of it and blitz in a liquidiser or blender along with the olive oil until it is a sauce like consistency
Season the broccoli sauce with salt and black pepper
When the pasta is cooked pour the broccoli sauce over the pasta. Mix well.
Put the remaining broccoli florets on top and serve
