Pasta with Butternut Squash and Green Beans



Serves 4

Ingredients
1 tbsp olive oil
1 onion, diced
1 clove garlic, crushed
225g butternut squash, cubed
100g green beans
1 tbsp tomato puree
400g tin chopped tomatoes
200ml water
400g penne, or other dried pasta
Salt and black pepper

Method
Fry the onion and garlic in the olive oil over a medium heat for 5 minutes.
Add the tinned tomatoes, tomato puree, butternut squash, green beans and water
Bring to the boil and simmer gently for 20 minutes or until the vegetables are cooked
Season with salt and black pepper
About 10 minutes before the end of the simmering put the pasta into a large pan of boiling water. Stir well to prevent it sticking together, and cook for 8-10 minutes (or according to the packet instructions)
When the pasta is cooked, drain, mix with the sauce and serve
