Pearl Barley And Vegetable Stew



Serves 2-4

Ingredients
100g pearl barley
750ml vegetable stock
100g carrots, chopped
100g swede, chopped
1 onion, chopped
1 tsp thyme
Salt and black pepper to taste

Method
Bring the vegetable stock to the boil in a saucepan
Add the pearl barley and the thyme, reduce the heat and simmer for 45 minutes
Add the carrots, swede and potato and simmer for a further 30 minutes until the barley and the vegetables are cooked
Season with salt and black pepper

Notes: This will serve 2 on its own or 4 if served with extra potatoes, vegetables or bread.
