Penne Arrabiata



This is a dish of penne pasta with a sauce of tomatoes, garlic and chilli.

Serves 4

Ingredients
1 tbsp olive oil
1 clove garlic, crushed
1 red chilli, chopped (or 1/2 tsp dried chilli flakes)
400g tin chopped tomatoes
salt and ground black pepper
400g penne

Method
Fry the garlic and chilli in the olive oil over a medium heat for 2 minutes.
Add the tinned tomatoes, bring to the boil and simmer gently for 10 minutes.
Meanwhile put a large pan of water on to boil. Add the penne and cook for about 10 minutes or according to the packet instructions
Season the sauce with salt and freshly ground black pepper
Drain the penne and toss it in the sauce
