Pork Belly And Haricot Bean Stew
Serves 4
Ingredients
2 tbsp olive oil
400g pork belly, cubed
1 tsp smoked paprika
1 tsp caraway seeds
2 cloves garlic, chopped
100ml white wine
1 stick celery, chopped
1 onion, diced
2 tbsp tomato puree
400g tin chopped tomatoes
200g fresh greens, savoy cabbage or kale, shredded
400ml water
410g tin haricot beans, drained
salt and black pepper
Method
Heat the olive oil in a large saucepan and fry the garlic, smoked paprika and caraway seeds for 1-2 minutes
Add the cubed pork and fry for a further 5 minutes or until the meat is browned
Pour in the white wine letting it bubble and evaporate
Add the celery and onion and cook for 2-3 minutes
Add the tomato puree, tinned tomatoes, greens and water
Bring to the boil and simmer gently for 1 1/2 hours
Add the haricot beans and simmer for a further 30 minutes.
Season with salt and black pepper
