Quinoa, Chickpeas and Spinach
Serves 4
Ingredients
1 tbsp vegetable oil
1 onion, diced
1 carrot, grated
250g cooked chickpeas
250g spinach
4 tomatoes, corded, deseeded and chopped
300g quinoa
300ml vegetable stock
2 tbsp tomato puree
1 clove garlic, chopped
1 tsp coriander
1 tsp cumin
juice 1 lemon
salt and freshly ground black pepper
Method
Cook the quinoa according to the packet instructions
Meanwhile put the oil in a saucepan on a medium heat
Add the onion and garlic and cook for a couple of minutes until the onion starts to soften
Add the carrot and tomatoes and cook for 5 minutes
Add the chickpeas, stock, cumin, coriander and tomato puree, bring to the boil and simmer for 10 minutes
Add the spinach and lemon juice and continue to simmer for another 5 minutes
Mix the cooked quinoa with the chickpeas and spinach
Season with salt and freshly ground black pepper
Heat through and serve
