Red Bean Stew
Serves 4
Ingredients
400g canned kidney beans, drained and rinsed
200ml passata
1 onion, halved and sliced
1 clove garlic, chopped
1 red chilli, deseeded and chopped
1 red pepper, deseeded and sliced
125g mushrooms, sliced
1/2 tsp cumin
1 tsp chilli powder
1 tbsp sunflower or vegetable oil
salt and black pepper
Method
Fry the onion, red pepper, chilli, mushrooms, garlic, cumin and chilli powder gently in the oil for 10 minutes
Add the kidney beans and passata and simmer for 20 minutes
Season with salt and black pepper
Serve with boiled rice, potatoes or crusty bread
