Roasted Onion Soup
Serves 4
Ingredients
500g onions
1.5 litres vegetable stock
2 sprigs thyme
2 tablespoons olive oil
salt and black pepper
Preheat the oven to 200C
Peel, halve and slice the onions
Mix the onion with the olive oil and thyme
Roast in a deep roasting tray in the oven for 30-40 minutes, stirring every 5 minutes, until soft and caramelised
Add the stock to the roasting tray and cook in the oven for another 30 minutes
Season with salt and black pepper and serve
