Rocket And Sunflower Seed Pesto
Ingredients
50g fresh rocket leaves
50g sunflower seeds
1 clove garlic
5 tbsp Italian extra virgin olive oil
50g grated parmesan
salt
freshly ground balck pepper
Method
Toast the sunflower seeds in a warm, dry frying pan for 1-2 mins
Place the toasted sunflower seeds, rocket, garlic and parmesan into a food processor and blitz for a few seconds
Add the olive oil and mix well
Season with salt and ground black pepper
