Spaghetti with Cream Cheese and Leeks
Serves 4
Ingredients
400g spaghetti
2 tsp olive oil
1 leek, halved lengthways and sliced
150g cream cheese with garlic and chives (such as Boursin)
Put the olive oil in a frying pan and lightly fry the leeks for 10 minutes.
Add the cream cheese and stir until the cheese melts
Meanwhile put a large pan of water on to boil. Add the spaghetti and cook for about 8 minutes or according to the packet instructions
Drain the spaghetti and toss in the sauce
Divide between 4 plates and serve immediately
Note: if the sauce seems too thick it can be let down by adding a little bit of the water the pasta is cooking in
