Spaghetti with Meatballs in Tomato Sauce
Serves 2
Ingredients
250g minced beef
100g breadcrumbs
1 beaten egg
1 onion
1 clove garlic
200g spaghetti
1 tin chopped tomatoes
1/2 tsp dried oregano
1 tbsp olive oil
salt and pepper.
Method
Mix with the mince, breadcrumbs and egg in a large bowl
Season the mixture with salt and pepper.
Wet your hands and roll into small balls
Place the balls on a tray in the fridge for 15 minutes to firm
Meanwhile for the sauce finely chop the onions and finely slice the garlic
Fry the onions and garlic in a little olive oil over a low heat for about 10 minutes until the onions are soft
Add the tin of tomatoes and the dried oregano
Simmer for 20 minutes
After the meatballs have firmed fry them in a little olive oil for a few minutes, turning them round until browned on all sides
Add the meatballs to the tomato sauce and simmer for 10 minutes until the meatballs are cooked through
Meanwhile put a large pan of water on to boil. Add the spaghetti and cook for about 8 minutes or according to the packet instructions
Drain the spaghetti and add to the meatballs and sauce
Mix together and serve
