Stovies



This is a traditional Scottish dish. It is cooked in one pan on top of the stove (an old Scottsh word for oven). It often has meat combined with it in order to use up leftovers from a roast dinner. Therefore it often has beef, mince, sausages or corned beef added to it.

Serves 4
Ingredients
1kg potatoes
1 large onion, chopped
1 tbsp vegetable oil, or dripping
400ml stock, or gravy
salt and black pepper

Method
Thinly slice the potatoes (approx 5mm thick)
Heat the oil in a large frying pan and fry the onion over a moderate heat for a couple of minutes
Layer the sliced potato over the onion
Add the stock until the potatoes are nearly covered
Season with salt and pepper
Put a lid on top of the frying pan and cook gently for about an hour until the potatoes are soft
