Sweetcorn Chowder
Serves 4
Ingredients
knob of butter
1 onion, diced
1 carrot, diced
1 potato, diced
250g sweetcorn (frozen or tinned)
1 tbsp cornflour
750ml vegetable stock
250ml milk
salt and white pepper
Method
Melt the butter in a saucepan over a medium heat, being careful not to let it burn
Fry the onion, potato and carrots in the butter for 2-3 minutes
Add the stock and the sweetcorn, bring to the boil and simmer for 20 minutes
Make a paste with a little of the milk and the cornflour and add it and the rest of the milk to the pan
Simmer for a further 10 minutes
Season with salt and white pepper and serve
