Tomato Soup
Serves 4
Ingredients
500g tomatoes, deseeded and chopped
1 onion, peeled and diced
1 carrot, peeled and diced
1 stick celery, washed and chopped
1 litre vegetable stock
1tbsp tomato puree
1tbsp olive oil
salt and black pepper
Method
Fry the onion, celery and carrot in the olive oil over a medium heat for 5 mins
Add the tomatoes, tomato puree and stock, bring to the boil and simmer for 45 minutes
Liquidise the soup using a hand blender or in a liquidiser/food processer
Return the liquidised soup to the heat.
Season with salt and black pepper and serve
